Today I'm not making a Catalan classic - I'm making a Spanish classic. So, while I didn't learn this at home, and tried it only already as an adult, I've come to love it and I incorporated it to my repertoire. In Spanish it's called "pollo en pepitoria", "pollo" being chicken, and "pepitoria" the stew or rather the sauce. One of the things I love about this one is the complete lack of American ingredients, including many that have become basic in "classic" Spanish cuisine, like tomatoes and peppers. This is a 100% pre-Columbian dish, so most likely something basically brough over from the Levant during the Muslim period. #foodstr #grownostr
