Bruh, I tired something tonight and I'm AMAZED!
Made a very low carb, ketovore pizza and it was absolutely spot on.
Here's what I used and how I did it:
- 100g provolone cheese
- 60g grana padano cheese
- 25g cascaval cheese
- 1 large egg
What I aimed for was 1:2 ratio of hard:soft cheese.
I finely grated all the cheese and mixed it with the egg in a bowl.
Then I put the "dough" on a tray lined with parchment paper and spread it around with a large spoon and my hand, especially on the edges.
It took a few minutes to spread it thin, but well worth it.
I then put the tray in the oven at 200°C for 12 minutes.
Took it out and left it by the open window to cool down for 15 minutes.
Topped it with some tomato passata (the only carbs, but minimal), ham, and chorizo.
Put it back in the oven for another 5 minutes.
And that was it!
I swear to god this was truly delicious, but I was more impressed with the texture.
It was soft, gooey, a bit sour (the cascaval cheese), which reminded me of sourdough pizza, and the edges were crusty.
Highly recommend you give it a try if you're mostly carnivore or ketovore.
